100% Sémillon. Sourced from Block 4A, the lower and cooler of the two Sémillon blocks at Les Collines Vineyard in the foothills of the Blue Mountains. Bottled towards the end of fermentation, and disgorged to remove the yeast shortly after fermentation completes in bottle, resulting in a naturally sparkling wine that is crisp, clean, and dry. Frothy and vibrant with creamy bubbles and nervy acidity. The nose presents generous aromas of yellow apple, fuyu persimmon, white flower and freshly cut hay. 11.8% ABV
