The Pouilly-Fumé Terres Blanches 2023 from du Bouchot is a biodynamically produced Sauvignon Blanc from the Loire that grows on mineral-rich marl with oyster fossils. A precise, elegant wine with pronounced minerality and cool freshness. Color: Pale yellow with silvery rim. Aroma: Maritime freshness with salty sea breeze and oyster shells, kitchen herbs (chervil, coriander, borage), cedary-citric notes, white pepper, grapefruit zest and yellow stone fruit. Palate: Austere minerality like liquid stone, fine-grained chalky grip, cool fruit, ripe acidity with cedary-citric aromas and white pepper, tense and elegant. 13.5% ABV
